Yields1 Serving
 1 Tablespoon olive oil
 1/4 cup zucchini, diced
 1 scallion, whites diced and greens cut into thin rounds
 4 eggs, beaten with a fork
 dash of salt, to taste

Heat olive oil in a warm pan. Add zucchini and sauté for 2-3 minutes.

Add the whites of the scallion and sauté for an additional 2-3 minutes, or until the vegetables start to brown.

Add salt to taste. Then add the beaten eggs and scramble. Heat until cooked through.

Garnish with the green scallion tops.
