
ZUCCHINI OMELETTE
Eggs are a wonderful source of protein and they support Kidney and Stomach function, as well as nurture the blood. Most importantly, eggs contain the energetic "Message of Life".
1/2 small zucchini
2 eggs
1/4 tsp salt
1/4 tsp mushroom powder
2 tsp oil
Dash of wine

Cut the zucchini into julienne strips.

In a bowl beat the eggs until frothy.

Add salt, mushroom powder and zucchini.

Coat the bottom of the wok with oil.

Wait until the oil is hot, it should be smoking slightly. Then add the egg and zucchini mixture. Allow it to cook for just under a minute, then lightly scramble or flip so that the egg mixture remains in a circle.

Add a splash of wine and serve.
