Slowly sauté half the minced garlic and all of the pine nuts in olive oil.
In a bowl, add the other half of the minced garlic, Chinese cooking wine, fish sauce, mushroom seasoning, soy sauce, and salt to taste.
In boiling water, add your favorite noodles.
When the noodles are done, strain them.
Toss the sauce over the noodles and garnish with the diced scallions.
