YIN/YANG TOAST

Everyone loves to crunch. This egg meal is toasted on one side yet soft on the other. Enjoy the balance between hard and soft.

Yields1 Serving
 2 slices of bread, cut in half
 2 eggs, beaten
 Salt to taste
 ¼ teaspoon of mushroom seasoning
 Handful of chopped cilantro or green of choice
 3 tablespoons of oil

Beat the eggs and add salt and mushroom seasoning. Then add the cilantro and beat again.

Dip one side of the bread in the egg mixture and set aside. Do this until each piece of bread is coated on one side.

Heat the oil in a frying pan.

Put the dry side of the bread into the hot oil. Allow the bread to lightly brown. Then, turn the bread over so the egg side is now cooking. Allow to cook for 5-10 seconds.
Flip the bread one more time so the dry side is nicely toasted.
