
WATERMELON CUCUMBER STIR-FRY
Watermelon and cucumbers refresh the body with moisture and naturally cools the body. For variety, add your favorite vegetable leftover to the stir-fry.

2 teaspoons of oil
1 scallion, diced
1/4 teaspoon of salt
1 /2 cucumber sliced thin
2 cups of watermelon chunks with white flesh
2 teaspoons of sugar
1/4 teaspoon of soy sauce
1 teaspoon of cooking wine

Heat the wok and add the oil, scallions and salt

Add the watermelon and cucumbers and toss well. Continue to toss. After 1 minute add cooked cabbage (if desired).

Continue to toss for another minute.

Add the soy sauce, toss, then add the cooking wine. Continue to toss for another minute then serve.
