TOMATO RICE BOWL

This satisfying dish is also easy to make with left over veggies. Begin with rice and add any vegetables or seasonings for that you're craving today.

Yields1 Serving
 2 tablespoon of olive oil
 1 teaspoon of salt
 1 cup of rice, Jasmine or basmati
 2 cups of boiling water
 5 cherry tomatoes, cut in half
 Handful of pine nuts
 1/3 cup of peas
 Handful of cilantro, chopped
 1 scallion diced

In a quart sized pot heat the oil.

Add salt and rinsed rice.

Stir for 30 seconds then add tomatoes and pine nuts.

Add boiling water and stir.

Lower flame to a simmer and cover.

Cook for about 10 minutes then add the peas, cilantro and scallions.

Rice is cooked when water is absorbed.

Optional, add shrimp for a heartier dish.
