SHIITAKE TOFU SAUTE

Shiitake cultivation dates back to 1209, during the Song Dynasty in China. Shiitake mushrooms help to balance Qi. When combined with tofu, the body is offered a meal that tonifies Qi and removes toxins.

Yields2 Servings
 ½ package of firm tofu, cut into 1/2 inch cubes
 3 tbsp of corn starch
 3 tbsp of oil
 1 clove of garlic, minced
 1 slice of fresh ginger, minced
 6 shiitake mushrooms, sliced thin
 8 thin asparagus tips, cut into 1 inch strips (optional)
 1 scallion, cut into 1/2 inch strips
 2 tsp of soy sauce
 Splash of cooking wine
 ½ tsp of sugar
 ¼ tsp of dark sesame oil
 2 tsp of warm water
 2 tbsp of hoison sauce (optional if you like sweet)

Coat the tofu in the corn starch.

Heat a wok and add the oil, garlic and ginger. Toss for 25-30 seconds.

Add the tofu and allow to slightly brown on one side, then gently turn each over and add the mushrooms, scallions and asparagus tips.

Gently toss the mixture until the veggies are cooked.

In a small bowl, mix together the soy sauce, wine, sugar, sesame oil, hoison sauce and water.

Drizzle over the tofu mixture and toss until well coated.

This meal is also great over a bed of warm greens.
