Radishes are such a great healing food and are especially effective during the fall season. Radishes support healthy Lung, and Stomach function and are also good for your skin. This spicy food also aids the immune system. We suggest eating lots of radishes year-round!

Yields1 Serving
 1 Radish chopped into thin, bite-sized slices
 1 teasp. of salt
 12 teasp. of organic sugar
 2 Cloves of garlic, chopped
 2 Tablespoons of vinegar-your choice. Can be apple cider vinegar or red vinegar.

Add the sliced radish to a bowl and add the salt. Mix well.

Add the sugar and the garlic and mix well again.
Taste the salad and adjust salt and sugar to taste.

Add the vinegar and mix well.
Refrigerate for 15 minutes to allow the flavors to mix.

Add hot sauce for an extra kick!

When buying radishes, look for a purple radish or the daikon radish. The small red ones are good too but not for this kind of pickling.
