
STRAWBERRY NUT QUINOA
A tasty breakfast to warm the Stomach - try it with crunchy peanut butter!

1 cup strawberries, sliced
1 cup quinoa
1/4 cup apple juice
3 tablespoons peanut butter
2 teaspoons raw or brown sugar
1 tablespoon nuts such as walnuts or pistachios, chopped

Combine strawberries and sugar in a bowl, and let stand for 10 minutes.

Meanwhile, combine quinoa with 2 cups of water, bring to a boil.

Lower the heat, cover and continue to cook for 10 -15 minutes until water is absorbed.

Remove from heat and stir in the peanut butter and apple juice.

Stir in the strawberries and top with the nuts.
