
SPINACH FRITATTA

1 cup of spinach
1/4 cup of oil
dash of salt
3 eggs, beaten
Splash of wine
1/2 scallion, diced

Heat wok and add oil. When hot add spinach and light saute′.
Take out of wok and drain.

Heat wok. When very hot add 1/4 cup of oil. Allow oil to become very hot.
Meanwhile beat eggs in a bowl, adding the salt.

Add eggs to the hot wok. swirl the mixture around for a and add spinach and scallions. Gently combine.
Flip egg mixture over and allow to turn slightly golden.

Splash with a dash of cooking wine. Enjoy.
