
SMOKED TOFU WITH CELERY
[cooked-sharing]
1 package of smoked tofu, cut into thin strips
4 celery stalks, sliced into 1/4 inch strips
1 onion, sliced into 1/4 inch strips
½ red pepper, cut into strips
2 teaspoons of oil
1 teaspoon of salt
2 cloves of garlic, sliced
1 teaspoon of mushroom seasoning
1 Tablespoon of wine
2 scallions, diced

Heat wok and add the oil and salt. When hot add the garlic.

Add 1/2 of the scallions to the hot oil. Toss quickly then add tofu.

Cook tofu for 1 minute then add the celery, red peppers and mushroom seasoning. Toss for 2 mintues.

Add the wine, and remaining scallions. mix quickly, then serve.

Optional: Leftovers can be made into a delicious soup. Boil 3 cups of water and then add the left overs.
