SIMPLY CHICKEN AND ONION STIR FRY
Making a meal in less than 4 minutes is a wonderful way to conserve Qi. In Traditional Chinese Medicine, onion helps regulate Qi and move phlegm. Chicken is known to dispel cold and regulate Qi. Cultures around the world turn to chicken broth to fight colds.
⅓ lb of chicken, cut into 1/4 inch pieces
1 tsp of salt
1 tsp of mushroom seasoning
1 tbsp of oil
½ onion, cut into slivers
¼ tsp of sugar
¼ tsp of black pepper
2 tsp of cooking wine
¼ cup of orange chunks
fresh ginger (optional)
1Put the chicken in a small bowl and add the salt, and 1/2 of the mushroom seasoning and 1/2 of the wine. Toss so the ingredients coat the chicken and set aside.
2Heat the wok. Add the oil and while it's cold add the chicken and onions, and ginger (optional). (This keeps the chicken tender)
3Toss continuously. After about two minutes, add the mushroom seasoning, sugar and the rest of the wine.
4Continue to stir for another minute or until chicken looks cooked. Add the orange pieces and toss one more time. Add black pepper to taste. Serve over rice or in a wrap or over greens.
