SIMPLY CHICKEN AND ONION STIR FRY

Making a meal in less than 4 minutes is a wonderful way to conserve Qi. This delicious meal can be amended using left over ingredients. In Traditional Chinese Medicine, onion helps regulate Qi and move phlegm. Chicken is known to dispel cold and regulate Qi. Cultures around the world turn to chicken broth to fight colds.

Yields1 Serving
  pound of chicken, cut into 1/4 inch pieces
 1 teaspoon of salt
 1 teaspoon of mushroom seasoning
 1 tablespoon of oil
 ½ onion, cut into slivers
 ¼ teaspoon of sugar
 ¼ teaspoon of black pepper
 2 teaspoons of cooking wine
 ¼ cup of orange chunks

Put the chicken in a small bowl and add the salt, and 1/2 of the mushroom seasoning and 1/2 of the wine. Toss so the ingredients coat the chicken and set aside.

Heat the wok. Add the oil while it's cold add the chicken and onions.
(This keeps the chicken tender)

Toss continuously. after about two minutes, add the mushroom seasoning, sugar and the rest of the wine.

Continue to stir for another minute or until chicken looks cooked. Add the orange pieces and toss one more time.

Serve over rice or in a wrap or over greens.
