SHRIMP AND KALE SKILLET

2 Tablespoons olive oil
1/2 cup onion, diced
2-3 garlic cloves, minced
1 teaspoon mushroom powder
1 large sweet potato, diced
2 cups fresh shrimp
3 cups trimmed and coarsely chopped kale leaves
Salt and pepper, to taste
1Add olive oil to a cast iron skillet over medium heat. When hot, add onions.
2Cook until onions are soft and opaque. Then add garlic and cook for about 30 seconds.
3Add sweet potato and mushroom powder. Cook until the potatoes are soft, about 10 minutes. Add a few Tablespoons of water to help steam the potatoes.
4Add the shrimp and cook for 2-3 minutes, only until they turn pink.
5Lower the heat and add the kale. Stir until the kale wilts.
6Season with salt and pepper.
