SEAWEED SALAD

 Seaweed
 1 Tablespoon rice vinegar
 1 Tablespoon soy sauce
 1 teaspoon toasted sesame oil
 1/2 teaspoon ginger juice
 1/2 teaspoon toasted sesame seeds
 1 scallion, finely chopped
 Salt, to taste
 Sweet Korean hot sauce, optional

Reconstitute a handful of mixed seaweed (you can buy dried seaweed salad mix or use wakame) by soaking in warm water for 6 to 8 minutes. Then drain the seaweed well and place in a serving bowl.

Mix the following for the dressing: rice vinegar, soy sauce, toasted sesame oil, ginger juice, toasted sesame seeds, scallion, and salt to taste.

Add dressing to the drained seaweed.

Add a dash of sweet Korean hot sauce!
