SCALLOPS AND ESCAROLE

Scallops make a quick easy meal and are great for Kidney Qi. Adding the arugula gives the Heart and liver additional support.

Yields1 Serving
 1 clove of garlic, minced
 3 tablespoons of oil
 ½ teaspoon of salt
 6 escarole leaves, chopped
 3-4 Scallops
 Breadcrumbs

Heat the wok and add 1 tablespoon of oil, the salt and garlic.
When hot add the escarole and toss for 1 minute.

Remove the escarole to a serving plate.

Add the remainder of the oil to the wok and heat.

Prepare the scallops by rinsing them then dusting in breadcrumbs.

Add the scallops to the hot oil. Allow to slightly brown then toss and cook the other side.
(about 2 minutes on each side.)

Add the scallops to the escarole.
