Coat a baking dish with 1/2 of the oil then add the scallions.
Place the fish on top of the scallions.
Sprinkle 1/2 of the salt onto the fish. Set aside.
In a hot wok, add the remaining oil and salt.
Add the tomatoes, onions, mushroom seasoning and sugar.
Stir fry for 30 seconds then add the red grapes. Add a splash of wine.
When lightly cooked, top the fish with this mixture.
Bake in 425 oven for 12 minutes.
Optional: In a very hot wok, heat 1 tablespoon of additional oil, add 2 cloves of diced garlic. Toast the garlic then pour over the cooked fish.
