Beets are great to detox and cool the Liver. Noted to help with irritability, and constipation beets contain anti-cancer properties. Don't throw away the tops! The beet greens pack a lot of nutritional value too. Eat them sauteed or add to your soups.

Preheat the oven to 400°.
Combine olive oil, garlic, beets, salt, and herbs in a casserole dish.
Toss to combine.
Loosely cover the dish and cook for about one hour, until the beets are tender.
Add apple cider vinegar and serve.
