COMFORT RICE

This is a comfort meal that we like to serve at the retreat house. Noodles and rice are the ultimate comfort food as they support the digestive system. For example, in the East rice gruel, called congee, is served to nourish those recovering from illness. Often medicinal foods or herbs are added to the rice for additional health benefits. 

Onions have detoxifying properties, helping to eliminate toxins from the body. Rice has a harmonizing effect on the digestive system, helping to alleviate digestive discomfort and promote regularity.

 

Yields1 Serving
 1 Cup of rice
 2 Cups of water or veggie broth
 1 Diced onion
 3 Tablespoons of butter
 1 Handful of rice noodles (can use thin pasta broken in small pieces)
 Salt

Rinse rice and soak in a bowl of water.

Meanwhile add butter to a pot and melt under medium heat.

Add onion, rice noodles and salt to butter and mix constantly until onions become translucent.

Drain rice and add to onion mixture.

Mix well, then add 2 cups of water or broth.

Leave pot uncovered until rice water boils, then lower to a simmer and cover, until rice is tender (about 40 minutes).
