Corn will support the Heart and Stomach and helps to improve digestion. Cilantro gives a nice kick to the dish and will help clean the blood.
Add whatever fresh ingredients you have in the refrig to make a similar salad.

Place the corn, tomatoes, cucumbers, red peppers and cilantro in a bowl and toss.
In a small bowl add the scallions, ginger, salt and mushroom seasoning.
Heat the oil and add it to the ginger scallion mixture.
Let cool for a few minutes, then pour over the corn salad.

We love mushroom seasoning for its depth of flavor. Just a little goes a long way. However, you can simply leave it out or replace it with your favorite dried or fresh herbs.
