
CORN SALAD WITH A TWIST
Corn will support the Heart and Stomach and helps to improve digestion. Cilantro gives a nice kick to the dish and will help clean the blood.
Add whatever fresh ingredients you have in the refrig to make a similar salad.

1 Cup of frozen corn, defrosted
6 Cherry tomatoes, cut in half
1 Cucumber, diced
⅓ Red pepper, diced
Cilantro
1 teaspoons of grated ginger
1 Scallion, diced
½ teaspoon of salt
¼ teaspoon of mushroom seasoning
1 Tablespoons of hot oil

Place the corn, tomatoes, cucumbers, red peppers and cilantro in a bowl and toss.

In a small bowl add the scallions, ginger, salt and mushroom seasoning.

Heat the oil and add it to the ginger scallion mixture.
Let cool for a few minutes, then pour over the corn salad.
