Pineapple has been used to reduce summer heat, aid in digestion, and is known to support Heart health as well as immune health.

Yields1 Serving
 1/2 onion diced
 3 slices of pineapple cut into 1/4 inch strips
 1 peach diced
 1 lime
 A handful of cilantro, chopped
 A dash of salt

In a mixing bowl add diced onions, pineapples, peaches and cilantro.

Sprinkle with salt and add the juice of one lime. Toss gently.

Refrigerate for 30 minutes to allow flavors to mix.

Optional: Enjoy over rice, or on crackers.
