2 Tablespoons of olive oil
2 cloves of garlic, diced
1/2 cup of kalamata olives, chopped
1 red pepper, seeded
1 pound of chicken, cut into strips (optional)
1 bunch of bok choi, roughly chopped
1Warm the olive oil in a large sauté pan over medium heat.
2Add the garlic and cook until fragrant, about 2 minutes.
3Add kalamata olives and sauté 2-3 minutes.
4Meanwhile, cut the red pepper into thin strips and add the pepper strips to the pan. Sauté 10 minutes.
5Add chicken (optional) and cook for about 5 minutes, until the side touching the pan is cooked.
6Then cover the pan and reduce the heat to low until the chicken is cooked through.
7Add the bok choi and cook down for 2-3 minutes, until the greens are wilted. Serve warm.
