
MUNG BEAN SPROUT SAUTE’
Mung bean sprouts are packed with "messages" of growth and life.

2 cup of mung bean sprouts
1/4 cup of oil
1/4 teaspoon of salt
4 slices of ginger
2 scallions cut into 1/2
1/4 teaspoon of sugar
1/4 teaspoon of mushroom powder
Splash of wine
1 teaspoon of sweet potato powder
Drizzle of sesame oil

Boil water and add the mung bean sprouts for 5 seconds.
Immediately rinse in cold water and strain.

In a heated wok add oil and salt.

Add ginger slices to the hot oil. Allow it to flavor the oil for 15 seconds then add the mung bean sprouts.

Toss the sprouts in the oil and add sugar, mushroom seasoning, and wine and toss again.

To 1/ 4 cup of cold water, add the potato starch and stir. Drizzle the starch over the mung bean sprouts and toss.

Add the remaining scallions then drizzle sesame oil over the sprouts and serve.
