 3 cups cubed watermelon
 2 large ripe tomatoes, chopped
 1 medium cucumber (peeled and seeded or not, depending on cucumber)
 1 small red onion, sliced
 1/3 cup pitted kalamata olives (whole or halved)
 Some chopped parsley and mint
 Olive oil and red wine vinegar
 Salt and pepper

Combine watermelon, tomatoes, cucumber, onion, and olives in a bowl.

Add the parsley and mint.

Toss with salt and pepper.

Drizzle with olive oil and red wine vinegar. Then toss one more time and serve.
