MATCHSTICK VEGETABLE SAUTE’
A plate full of colorful vegetables is always appealing, especially when you understand how healthy eating contributes to a healthier body. And this simple little dish packs a punch! As root vegetables, celery root and carrots benefit your Stomach and Spleen. Garlic and leeks support your Liver function, and red pepper gives your Heart a boost. For an added treat, make a healthy taco by putting some grilled fish in a warm tortilla, then topping with these colorful vegetables and a little slice of avocado.

1 Tablespoon of olive oil
3 cloves of garlic, diced
1 leek, diced
1 celery root, peeled and cut into 1/8” sticks, or smaller
4 carrots, peeled and cut into 1/8” sticks
3/4 cup vegetable broth or water
1/2 red pepper, cut into 1/4″ sticks
4 leaves of basil, chopped
1Place olive oil and garlic in a sauté pan over medium heat.
2Add the leeks and let sauté until fragrant.
3Add the celery root and carrots and mix the vegetables around the pan.
4Then add the broth and cook, partly covered, about 30 minutes or until tender.
5Mix in the red peppers and sauté about 5 minutes longer, or until the peppers soften.
6Garnish with the chopped basil.
