WHITE FUNGUS SOUP

 4 cups of dried white fungus
 10-20 red dates
 1 cup of lotus seeds
 Rock candy
 6 cups of water

Wash the fungus thoroughly, soak in water for about ten minutes until reconstituted.

Place all the ingredients in a crock pot and cook on high heat for 4 hours.

Note: the longer you cook, the more gelatinous the soup gets.
