
MASTER LU’S CUCUMBER SALAD
The cucumber with its cool essence supports Lung function. By adding vinegar, you will also support your Liver function.

1 large cucumber
1 carrot
2 cloves of garlic, minced
1/2 teaspoon of salt
1/4 teaspoon of sugar
1 teaspoon of mushroom powder
1 Tablespoon of vinegar
drizzle of toasted sesame oil

Peel and cut the cucumbers lengthwise in quarters, remove the seeds, and then cut in diagonal slices.

Julienne the carrot for color or substitute a thinly sliced red pepper. Add to the serving bowl.

Add the salt and chopped garlic. Mix well.

Add the vinegar, mushroom powder, and mix.

Taste for added salt or vinegar.

Refrigerate for 20 minutes.

Add a drizzle of toasted sesame oil just prior to serving.
