1 clove garlic, minced
1/2 tablespoon fresh rosemary, minced
1/2 teaspoon fresh thyme, minced
sea salt, to taste
freshly ground black pepper, to taste
2-4 lamb chops
olive oil

In a small bowl, mix the herbs, salt and pepper.

Dip both sides of the lamb chops into the herbs. Let sit for up to 6 hours in the refrigerator.

Heat a cast iron pan over high heat. Brush with olive oil.

Place the lamb chops on the hot pan. Flip after 2-3 minutes. Cook for an additional 3 minutes.

As an alternate, grill the lamb chops, following the same timing.
