KALE AND SWEET POTATO SAUTÉ

 1 sweet potato, peeled and chopped
 ¾ cup kale, deveined and chopped
 1 leek, diced
 2 Tablespoons of olive oil
 1 Tablespoon of butter
 Salt to taste

Place the olive oil and butter in a large sauté pan over medium-low heat until the butter is melted.

Add the leek and salt and sauté for about 5 minutes.

Add the sweet potato to the pan and mix to coat with the leek mixture. Lower the heat and cover.

Sauté for about 25 minutes, or until the potatoes are tender, stirring every few minutes. Be sure the potatoes lie flat in the pan.

Once the potatoes are tender, turn off the heat. Add the chopped kale and mix carefully, as not to break up the potatoes.

Cover the pan and let sit for about 5 minutes, or until the kale is wilted. Serve warm.
