INTERNATIONAL RADISH CAKE
Radishes are considered a super food in Chinese medicine. They are known to prevent cancer, reduce inflammation, strengthen the respiratory and immune system, facilitate weight loss, improve bowel function, reduce risk of heart disease, regulate blood pressure and hormones and strengthen bones.

1 1/2 cups Warm water
1 tbsp Salt
1 tbsp Mushroom powder
1 ½ tbsp Oil
1 ½ lbs Rice flour-non glutenous
2 cups Daikon radish, grated
¼ cup Dried shrimp, reconstituted and finely chopped (optional)
2 Scallions, chopped
⅓ cup of raw peanuts, walnuts or pine nuts
Optional: dd cilantro, ham or gree olives
1Fill a large steamer pot with water and bring to a boil.
2Oil bottom and sides of a loaf sized pan.
3In a large bowl add the water, salt and mushroom seasoning.
Next add the flour, radish, shrimp, scallions and peanuts.
4Mix using your hands.

5Taste the mixture and add more salt if needed.
6Pour mixture into your pan and place in the double steamer.
7Steam for 1 1/2 hours. Make sure there is enough water in the steamer throughout the cooking time.
8Remove from heat and cool.
9When you are ready to eat, cut, fry in oil and serve.
10Tip: Some radishes contain more water than others. After you chop the radish add some additional salt to extract water. Allow to sit 5-10 minutes.
Tip 2: Gradually add the water to determine consistency preferred.
