International radish cake
Yields1 Serving
 2 cups warm water
 ½ large daikon radish, julienned
 ¼ cup dried shrimp, reconstituted and finely chopped (optional)
 1 scallions chopped small
 1 stalk celery chopped small
 4 green Italian olives chopped fine (optional)
  cup of raw peanuts
 1 ½ lbs rice flower
 2 tbsp mushroom Powder
 1 tbsp Salt
 ¼ tsp sugar
 1 ½ tbsp oil

Fill a large steamer pot with water and bring to a boil.

Oil bottom and sides of 2 loaf pans.

Dissolve mushroom powder, salt, and sugar into 2 1/2 cups hot wate.r

Using your hand, mix together the flour, radish, shrimp, scallions, celery, olives and peanuts while gradually adding in the liquid.

Taste the mixture and add more salt if needed.

Mix in the oil. The mixture should be firm, not runny.

Place mixture in the pans and place the pans in the double steamer.

Steam for 1 1/2-2 hours. Make sure there is enough water in the steamer throughout the cooking time.

Remove from heat and cool.

When you are ready to eat, cut, fry in oil and serve
