 3 quarts water
 3/4 cup fresh ginger, peeled and chopped
 2 to 3 cinnamon sticks
 Large handful toasted pine nuts
 Raw honey, to taste

Bring water to a boil with cinnamon sticks and ginger.

Cover and simmer for 1 hour.

Using a sieve, strain into cups and sprinkle roasted pine nuts on top.
