
ROASTED ENDIVE

2 Endives, cut in half length wise
3 Scallions, cut into 4 inch strips
1 tablespoon of olive oil
1/2 teaspoon of salt
Cracked pepper to taste
1 clove of garlic, minced

Preheat the over to 425 degrees.

Arrange the endive and scallions on a cookie sheet. Brush them with the oil, then sprinkle them with the salt, cracked pepper, and garlic.

Place the cookie sheet on the top shelf of the oven for 20-30 minutes or until the endive looks translucent. Place under the broiler for 3-5 minutes.

Option: In warm weather, try grilling the endive outdoors.
