 1 lb of salmon
 2 scallions, cut into 2 inch strips
 Ginger, finely sliced
 1 teaspoon of salt
 1/4 cup of cooking wine
 1/4 cup of soy sauce
 1 teaspoon of sugar
 1 Tablespoon of hoisin sauce
 1 Tablespoon of orange marmalade
 Oil, drizzled over fish

Line a pyrex pan with scallions, then add the fish.

in a small bowl add all the remaining ingredients except the oil. Mix well and pour over the fish.

Drizzle the oil over the fish.

Bake uncovered for 15 minutes, 400 degrees. Then adjust the oven to broil and continue to cook the fish for 2 more minutes.
