FRESH SLICED LOTUS ROOT SALAD

Lotus root is good at strengthening your stomach and lung function. Lotus root even looks like a human lung.

 1 Bag of fresh sliced boiled lotus root (can be found on Amazon or at your local Asian Grocery)
 1 tablespoon minced, fresh ginger
 1 Scallion
 1 tablespoon honey
 1 tablespoon oil
 ½ teaspoon mushroom seasoning
 ½ teaspoon salt
 1 Splash of rice wine vinegar
 ½ Tablespoon sesame seeds

Open bag and rinse lotus root thoroughly. Let lotus root drain and add to a large bowl.

Rough chop the green part of the scallion.

In a separate bowl whisk together the salt, honey, mushroom seasoning, minced ginger, and rice wine vinegar.

Pour liquid over sliced lotus root, mix until all pieces are coated with the dressing.

Let it sit for 1 hour so all flavors can combine.

Garnish with scallion and sesame seeds.
