Soybeans, in any form, have long been a delicious staple in Asian cultures. Tofu’s cooling essence moistens the Lung and Large Intestine, making it a useful food remedy for coughs and constipation.

 8 ounces cubed firm or smoked tofu
 3 tablespoons of any of the following condiments: olive tapenade, artichoke spread, bruschetta, red pepper sauce, eggplant caponata
 2 scallions, chopped
 2 tablespoons of parsley, chopped

Steam tofu for 8 minutes.

Top with pre-made condiment and add sliced scallions and chopped parsley.
