 8 ounces cubed firm or smoked tofu
 3 tablespoons of any of the following condiments: olive tapenade, artichoke spread, bruschetta, red pepper sauce, eggplant caponata
 2 scallions, chopped
 2 tablespoons of cilantro or parsley, chopped
 ½ avocado, sliced

Steam tofu for 8 minutes.

Top with pre-made condiment, sliced scallions, parsley, and avocado slices.
