CUCUMBER AND ONION SALAD

Onions are the perfect food to detoxify the body. Adding cucumbers is an added bonus for the taste buds and the body!

Cucumber and onion with vinegar salad helps clear internal heat and support fluids in the body. Cucumbers refresh the Stomach while onions help move Qi and promote smooth digestion. The Sour taste of vinegar support the Liver.

Yields1 Serving
 2 English cucumber, sliced
 1 clove garlic, chopped
 2 teaspoon salt
 2 tbsp apple cider vinegar
 1 tsp of oil
 1/2 tsp mushroom seasoning
 Optional: hot pepper flakes

Add the onion slices to a bowl with 1 teaspoon of salt and let stand ten minutes.

Meanwhile, add the sliced cucumber to a mixing bowl.

Top with garlic, and 1 teaspoon of salt. Toss well.

Add apple cider vinegar and the hot pepper flakes (if desired).

Toss well and let stand for a few minutes before serving.

Optional: drizzle some sesame oil before serving.
