Dress up this classic white rice porridge with your favorite veggie, egg or meat.

 1 cup long grain white rice
 6 cups boiling
 2 scallions

To the boiling water add the rice. Stir and reduce flame to a simmer.

Allow to cook for 15 minutes of until you hear the sound of the simmer change.
The rice should then be open and thickened. Remove from heat and let sit.

Note: Feel inspired to stir in leftover veggies during the last 3 minutes of cooking.
