Confort Soup
Yields1 Serving
 2 quarts of boiling water
 2 chicken legs (optional)
 2 tablespoons of oil
 2 celery stalks, including leafy green tops, cut into bite-sized chunks
 2 leeks chopped
 1 teaspoon of mushroom powder
 1 cup of fresh spinach chopped
 Salt and pepper to taste

Add chicken legs to the boiling water. Cover the pot and allow to boil for 30 minutes.

Remove chicken from boiling water and debone.

Cut chicken into bite-sized pieces and add back to the boiling water.*

Heat wok and add oil and salt.

Add celery and leeks to the wok and saute for 2 minutes.

Add vegetable mixture to the pot of boiling water.

Add 1 teaspoon of mushroom powder

Allow flavors to mix for 5 minutes.

Add spinach and pepper.

Adjust taste.

Note: You can add noodle to this mixture or leftover rice.

*If you choose not to use chicken, simply boil water and follow the directions starting with "heat wok."
