COMFORT SOUP
In TCM, ingredients like celery, leeks, and spinach, the digestive system is supported and it strengthens the Liver. It aids in detoxification, promotes blood circulation, and nourishes the body for overall balance.

2 quarts of boiling water
2 chicken legs (optional)
2 tablespoons of oil
2 celery stalks, including leafy green tops, cut into bite-sized chunks
2 leeks chopped
1 teaspoon of mushroom powder
1 cup of fresh spinach chopped
Salt and pepper to taste
1Add chicken legs to the boiling water. Cover the pot and allow to boil for 30 minutes.
2Remove chicken from boiling water and debone.
3Cut chicken into bite-sized pieces and add back to the boiling water.*
4Heat wok and add oil and salt.
5Add celery and leeks to the wok and saute for 2 minutes.
6Add vegetable mixture to the pot of boiling water.
7Add 1 teaspoon of mushroom powder
8Allow flavors to mix for 5 minutes.
12Note: You can add noodle to this mixture or leftover rice.
13*If you choose not to use chicken, simply boil water and follow the directions starting with "heat wok."
