CHINESE BARLEY WITH YAM

Chinese barley has been studied for its anti cancer properties. Combine barley with Chinese yams and the overall impact will support digestive health, boost energy, and reduce inflammation. It is also used to treat a variety menopausal symptoms.

 1 cup of rinsed Chinese barley
 5 cups of water
 1 Chinese yam or other yam, diced
 Optional: brown sugar, honey or grated ginger.

Rinse the barley well, then add to a pot of boiling water.

Stir, then lower the flame to a simmer. Allow to cook for 15 minutes then add the diced yam.

Cook for another 15 minutes or until the barley is tender.

Continue to watch the water levels. If you prefer a soupy mix, then add additional boiling water at any time.

Top with brown sugar, or honey and grated ginger.
