CHICKEN WITH BROCCOLI
This delicious meal supports the Liver and the Stomach. Together these two organs are considered key in healthy digestion.

1 Tablespoon of olive oil
½ Yellow onion, chopped
1 Tablespoon of butter
8 Ounces of cremini mushrooms, sliced
1/2 Pound of boneless skinless chicken, sliced into small cubes
1 Bunch broccoli rabe or Di Cicco broccoli, roughly chopped
1/3 cup of red wine
¼ Tablespoon of butter
Optional: Snow pease and sesame seeds
1Place olive oil and butter in a sauté pan over medium heat.
2Add the chopped onions and a dash of salt.
3Sauté for about 3 minutes.
Add the mushrooms to the pan and cook down, about 5 minutes.
4Add the chicken to the pan. Cook over medium heat until chicken is cooked through.
5Remove the chicken from the pan and add the broccoli.
Toss then go onto deglazing.
6Deglaze the pan with 1/3 cup of water.
7When the water comes to a boil, add the red wine and butter.
8Add the chicken back to the pan, warm, and serve with wild rice.
9Optional, add snow peas and sesame seeds for additional flavors.
10* Feel free to substitute the jarred sun-dried tomatoes for dried sun-dried tomatoes.
11Be sure to hydrate the dried tomatoes in warm water before adding them to the recipe.
