CHICKEN WITH BROCCOLI

This delicious meal supports the Liver and the Stomach. Together these two organs are considered key in healthy digestion.

Yields1 Serving
 1 Tablespoon of olive oil
 ½ Yellow onion, chopped
 1 Tablespoon of butter
 8 Ounces of cremini mushrooms, sliced
 1/2 Pound of boneless skinless chicken, sliced into small cubes
 1 Bunch broccoli rabe or Di Cicco broccoli, roughly chopped
 1/3 cup of red wine
 ¼ Tablespoon of butter
 Optional: Snow pease and sesame seeds

Place olive oil and butter in a sauté pan over medium heat.

Add the chopped onions and a dash of salt.

Sauté for about 3 minutes.
Add the mushrooms to the pan and cook down, about 5 minutes.

Add the chicken to the pan. Cook over medium heat until chicken is cooked through.

Remove the chicken from the pan and add the broccoli.
Toss then go onto deglazing.

Deglaze the pan with 1/3 cup of water.

When the water comes to a boil, add the red wine and butter.

Add the chicken back to the pan, warm, and serve with wild rice.

Optional, add snow peas and sesame seeds for additional flavors.

* Feel free to substitute the jarred sun-dried tomatoes for dried sun-dried tomatoes.

Be sure to hydrate the dried tomatoes in warm water before adding them to the recipe.
