BROCCOLI RABE AND VEGGIE MIX

This veggie is most tender during the Spring season. Broccoli rabe helps support healthy Liver function. Its bitter taste makes it equally beneficial for Heart health.

Yields1 Serving
 2 teaspoons of oil
 2 cloves of garlic, sliced
 2 teaspoons of salt
 1 bunch of broccoli rabe, washed and cut into three inch chunks.
 5-6 mushrooms, washed and sliced
 ½ onion, cut into slivers
 ½ tomato, cut into 1/2 inch chunks
 ¼ cup of pine nuts

Heat your wok.
Add 1 teaspoon of oil, and 1 teaspoon of salt.

Add the tomatoes, onions and mushrooms.
Toss

Add the mushroom seasoning and toss well for 2 minutes.
Remove the veggie mixture from the wok and reserve any liquid.

Rinse and dry the wok.
Heat the wok and add 1 teaspoon of oil, 1 teaspoon of salt and the garlic.

Add the broccoli rabe and toss for 3 minutes or until slightly tender.

Add the veggie mixture along with the reserved liquid.
Toss well and allow flavors to mix for 2 minutes.

Add a splash of wine anf the toasted pine nuts.
Toss well and serve.

Option: Serve over rice, quinoa or pasta.
Leftovers can be chopped and added to boiling water to make a delicious soup
