
BLUEBERRY PANCAKES

½ cup of blueberries, washed
1 cup of all purpose flour
½ cup of milk or almond milk
2 tablespoons of oil
1 egg beaten
Maple syrup to taste
OPTION: 1 cup of pancake mix prepared per box instructions

Combine the flour, milk and oil to a mixing bowl.
Gently whisk.

Add the beaten egg and whisk one more time.
Fold in the blueberries.

Set mixture aside for 5 minutes.

Heat a frying pan and light grease with oil.

In large spoonfuls, drop the batter into the pan. Allow the mixture to turn bubbly before flipping.
Flip when ready, cook on the alternate side.
Enjoy!
