 Chinese barley, rinsed well before cooking
 water (5 times the amount of barley)
 1 apple, finely chopped
 pine nuts, walnuts, or pecans, lightly toasted
 scallion, finely chopped
Dressing
 1 Tablespoon mayonnaise
 1 heaping Tablespoon of marmalade jelly
 sugar, to taste

Cook the Chinese barley for 45 minutes to 1 hour.

Drain off any remaining liquid and allow the barley to cool.

Healing Tip: For a refreshing and healthy drink, reserve the liquid from the barley, add honey to sweeten, and you’ll have a delicious healing beverage.

Mix all the ingredients and toss with the dressing.

Eat at room temperature or chill and serve.
