 16 ounces of extra firm tofu, drained
 1/2 cup ketchup
 1-1/2 Tablespoon of balsamic vinegar
 1/4 teaspoon of ground ginger
 1/3 cup of honey
 1/2 Tablespoon of toasted sesame seeds
 1 leek, diced
 2 carrots, chopped
 1 yellow pepper, chopped

Make the barbecue sauce by mixing the ketchup, balsamic vinegar, ground ginger, honey, and 1/4 Tablespoon of the sesame seeds together.

Set aside. Cut the tofu into cubes and dry the cubes on paper towels.

Place the tofu in a baking pan and top with the barbecue sauce.

Mix gently to combine. Sprinkle the leeks, carrots, and pepper over the tofu.

Top with the remaining sesame seeds. Bake at 375° for about 20 minutes.

Gently mix the tofu and vegetables.

Raise the oven temperature to 425°.

Continue baking for about 10 minutes, or until the vegetables are slightly caramelized.
