TOFU WITH A BARBECUE SAUCE

Tofu with leeks in TCM promotes blood circulation, regulates Qi, aids digestion, supports nutrient absorption, detoxifies, and balances energy.

 8 ounces of extra firm tofu, drained
 1/2 cup ketchup
 1-1/2 Tablespoon of balsamic vinegar
 1/4 teaspoon of ground ginger
 1/3 cup of honey
 1/2 Tablespoon of toasted sesame seeds
 2 Tablespons of cornstarch
 1 leek, chopped
 1 yellow or green pepper, cut into strips

Cut the tofu into 3/4 inch cubes and dry the cubes on paper towels.

Make the barbecue sauce by mixing the ketchup, balsamic vinegar, ground ginger, honey, and sesame seeds together.

Add 2 tablespoons cornstarch to the barbecue sauce.

Place the tofu and vegetables in a bowl and coat with the sauce.
Then place the coated tofu onto a baking sheet.

Bake at 425° for 30 minutes.
