BAKED MARINATED SALMON WITH SCALLIONS

This delicious and easy-to-make recipe combines two nourishing foods: salmon enhances your Kidney Qi and scallions benefit your Liver. You can use salmon fillets or steaks, or even the whole fish. Preheat the oven to 425 degrees and then bake the fish with this rule in mind: For each inch of thickness of the fish (measuring at its thickest part), bake it for 10 minutes.

Yields1 Serving
 6 Tablespoons oil, for baking
4 or 5 scallions, washed, trimmed, and cut in half lengthwise
 Marinade (http://tcmworld.org/recipe/the-marinade/)
 1 lb Salmon
1

Cover the bottom of a baking dish with oil.

2

Line the bottom of the oiled dish with about ¾ of the scallions.

3

Spoon ½ of the marinade over the scallions.

4

Place the fish in the center of the marinade-covered scallions.

5

Spoon the remaining marinade over the fish and top with the rest of the scallions.

6

Cover with foil and refrigerate, allowing the fish to marinate overnight. (If you are pressed for time, you can marinate for four hours, but the flavor is best when more time is allowed).

7

Remove from the refrigerator and bake uncovered at 425 degrees until the fish is fully cooked.

8

Serve hot.
