AZUKI RED BEAN SOUP
Red bean soup is both a popular snack and a sweet dessert soup. Azuki beans benefit the heart and aid digestion, relieves edema, invigorates blood circulation, promotes urination, and clears heat. Tangerine peel’s warm essence helps to clear phlegm and eliminate dampness in the Stomach and upper abdominal area.

1 cup of azuki (adzuki) beans
6 – 8 cups of water
1 strip of dried tangerine peel or fresh orange peel
1/4 – 1/2 cup (about 1 1/4 – 2 1/2 ounces) dried lotus seeds
6 – 8 Tablespoons of brown sugar or rock sugar, as desired
1Soak the Aduki beans in warm water
2About 2 hours before making the soup, place the dried lotus seeds in a bowl with enough water to cover.
3In a medium saucepan, bring the 6 cups of water with the tangerine peel to a boil.
4Turn the heat down, add the azuki beans and lotus seeds and simmer, partially covered, for 1 to 1 1/2 hours, until the beans are softened to the point where they are just beginning to break apart.
5Add the brown sugar and stir until dissolved.
6Remove the dried tangerine peel before serving.
7Serve the red bean soup hot or cold. Serves 6 – 8.
