This garden fresh soup is a welcome treat. Avocados and tomatoes have a cooling essence and are good for the digestive system. Avocados are great when experiencing hot flashes, dry skin and constipation.

Yields1 Serving
 1 tablespoon of oil
 2 teaspoons of salt
 ½ tomato, cut into 1/3 inch chunks
 ½ onion, diced
 ½ teaspoon of mushroom powder
 3 cups of boiling water
 ¼ cup of cooked noodles
 ½ avocado, diced
 1 scallion, diced
 Handful of chopped parsley or cilantro

Heat a wok and add the oil and salt.
Then add the tomato and onion and toss for 1 minute.
Add the mushroom seasoning.

Pour boiling water into wok and add the cooked noodles and avocado chunks.

Add the parsley and scallions.

Optional: Add a squeeze of lemon for zest!
