AVOCADO AND EGGS

Eggs and avocado create a nourishing meal in Traditional Chinese Medicine, supporting Blood, the Kidney, and the Stomach. This simple combination helps maintain smooth digestion while providing gentle nourishment for the body and Qi.

 1 large ripe avocado, diced
 2 large eggs
  cup roasted unsalted walnuts, crushed
 1-2 teaspoons toasted sesame oil
 1-2 teaspoons rice wine vinegar
 1-2 teaspoons mushroom seasoning
 1-2 teaspoons fresh chives or garlic chives, chopped finely
Directions

Boil the eggs until hard boiled. Submerge in cool water then peel.

Chop the eggs then add them to a large bowl along with the avocado.

Sprinkle with mushroom seasoning, rice wine vinegar, sesame oil and chives.

Mash to desired consistency.

Fold in crushed roasted walnuts.
