Spring is the best time to support the Liver. Including arugula, spinach, mustard greens all support healthy Liver function.

Heat your wok and then add the oil and salt.
Add the arugula and toss for 1 minute or until slightly wilted.
Add the beaten egg to the arugula.
With a spatula, mix the arugula and eggs together until your desired consistency.
Add pepper and serve.
Tip: Make sure your wok is very hot before adding the augula.
