
3 MINUTE SCRAMBLE

No time to eat? Try this simple dish. Eggs support the Stomach and Kidney and help nourish the Blood. Fresh cilantro gently supports the Liver and aids digestion, helping food and Qi move more smoothly.
2-3 eggs
¼ tsp of salt
¼ tsp of mushroom seasoning
Handful of cilantro, chopped
1 tsp of butter
2 scallions, chopped
Pepper to taste

Crack the eggs into a small bowl. Add the salt, pepper, mushroom seasoning and cilantro.

Beat the eggs using chopsticks or a fork. Beat for 1 minute until the eggs look fluffy. Set aside.

In a non-stick frying pan, melt the butter. Add the scallion and sauté for 1 minute.

Add the beaten egg mixture to the frying pan. Gently mix the eggs and onions together.

Allow one side to cook for less than 1 minute, then flip over or scramble.
