
JOB’S TEARS FRUIT MEDLEY
This refreshing salad of Chinese barley (Job’s Tears) and fresh fruit strengthens the Spleen and Stomach, improving digestion and clears Heat and toxins.
Rinse the barely and add to 4 cups of boiling water. Lower to a simmer and continue to cook until tender. Remove from heat and strain any excess water.
Add the barley to a large bowl and pour the juice of the mandarin oranges over the barley and toss. Refrigerate for 10 minutes.
Add all the other ingredients and toss.
Option: Add some dried cranberries and any other fruit you like for variety.
Add some marmalade jelly for variety.
